How to Cook Fish in the Oven

Here is a super simple recipe for cooking fish in the oven. This recipe will work for any thin white fish- such as Tilapia.

Check at your Trader Joe’s store in the frozen fish section and choose a fish that looks good to you. Make sure to thaw the fish overnight in your refrigerator before cooking.

I love fast and easy dinners like this. We served this fish with some roasted potatoes (leftover from another meal) and a salad with yummy garlic bread just to round it out.

What you need

  • Thin white fish (1 per person)
  • Tomato slices for the fish (optional but adds great flavor & color)
  • Olive oil, salt, pepper & any spices you like

What you do:

Pre-heat your oven to 400 degrees or 425 if you feel your oven is not all that hot.

In the bottom of a oven safe dish (glass is what I like to use) sprinkle a spoonful of olive oil to lightly coat the bottom of the dish.

Carefully add your thawed fish fillets to the pan, making sure they in a single layer.

Season with salt, pepper and any seasonings you like to use. We like to add a small amount of Trader Joe’s 21 Seasonings to our fish.

Add a few slices of tomato on the top of your fish.

Place your pan in the oven for 10 minutes, then turn your fish and place it back in the oven for 5 more minutes OR until the fish is white and flaky (no longer “clear”).

TaDa! it’s ready…

Now serve up your wonderful fish!

Cinnamon Brooms at Trader Joe’s

Have you enjoyed all the wonderful smells wafting out of Trader Joe’s these days?? I especially am enjoying smelling those Cinnamon Brooms in the entry every time we walked in to our Trader Joe’s in Kansas City.

Well, this year we took the plunge! We bought a broom!

And we absolutely LOVE it!

Like I said earlier, we have always enjoyed the sent in the stores- but never bought one. I was frankly a bit worried that the broom might be an overpowering scent inside our house.

But we were talking to friends at Trader Joe’s last week and they said they were going to hang the broom on their front door …. and this got me thinking ….

Use the broom as an entry way decoration! 

And that is what we did.

We have the broom on display on our back porch- the entrance that we use each day- and it just smells wonderful. Each time we use the door a soft wisp of Cinnamon greets us … and just puts a smile on my face!

Danish Kringle at Trader Joes

Have you tried the Danish Kringle

at Trader Joe’s?

OMG!

What the Hey is a Kringle you ask? (Yep, I had to look it up too ….) A Kringle is a wonderful Scandinavian pastry that is related to a pretzel and can come in a savory (like a salty pretzel) or sweet variety.

The ones at Trader Joe’s are the sweet kind. It is a round, flat ring of pastry that has a wonderful filling. I have tried Almond and this one  is … Pumpkin flavored!

The pastry is a wonderful rich and tender pastry, which surrounds the filling of the Danish Kringle. On the top – the pastry had a wonderful light icing that complemented the filing.

The package (and the lovely folks in our Trader Joe’s store) recommended that we gently warm up the Kringle before eating….

All we can say is WOW!

Warm, soft and absolutely Yummy!

The package says that you can freeze this and if you thought it could make it in your house until the holidays, then I would say that It might make a wonderful, yet different Pumpkin offering at a Holiday Brunch maybe?

I wanted to make sure that you knew about The Danish Kringle as the package is a bit on the plain side (kinda uninviting really) and the fact that you cannot see what is inside makes it very easy to overlook in the store. In fact the packaging reminds me of those big crackers that you used to see in a large paper package ….but this is SO much more ….

Trader Joe's Seville Orange Marmalade

Maybe I am just strange, but I LOVE a good orange marmalade. I enjoy it on bread with a little bit of butter or almond butter or my favorite is on toasted English muffins (sometimes with a bit of cheese melted on top too…). Yummoooo!

Why orange marmalade? I guess it is the combination of bright and tangy flavors.  The ORANGE with bits of the orange peel that make it just a little sharp.
