Easy Harry Potter Recipe: Castle Cats

Are you looking forward to the new Harry Potter Movie as much as we are? We are so excited and have been thinking and planning some yummy treats so keep reading to find an Easy Harry Potter Recipe, Castle Cats!

Yep, a kid-friendly and super easy treat to enjoy with your tea~We LOVE Trader Joe’s Irish Breakfast–so tasty!

 

1 Can Trader Joe’s Buttermilk Biscuits

1 8oz tub Trader Joe’s Whipped Cream Cheese

1 Jar “red” jam (we used Trader Joe’s Strawberry preserves)

Optional: Dried fruit and nuts to decorate

Preheat oven to 375 degrees and line your baking sheet with foil.

 

Open the can of Trader Joe’s Buttermilk Biscuits and separate them on a cutting board. For each Castle Cat Face, take a biscuit and flatten out with your fingers or a rolling pin. Place a Tablespoon of whipped cream cheese and a tablespoon of jam in the middle of the circle.

 

Carefully fold the sides of the biscuit tougher to form a half circle. Seal the edges together with a fork. Stretch each end back to form the cat ears.   Place each Castle Cat Face on the foiled lined baking sheet.

Cut slits for eyes with a small paring knife and decorate with fruit and nuts if you like.

Bake for 15-20 minutes or until fully cooked and golden brown.

Makes 8 Castle Cats

How To Cook Dover Sole

We were poking around in the fish section at our Trader Joe’s. We had to do this exploratory quest as once again Trader Joe’s re-organized the area, and we can’t find anything! OK what I really should say was that Trader Joe’s has shuffled all the frozen items around, and now we are seeing all kinds of new stuff for the first time.

Which is exactly what happened!

We were searching for our usual salmon, but instead we discovered a whole package of Dover Sole! YUM! I love Sole as it is such a delicate/light fish.  So we bought the sole instead and had a fabulous couple of meals as a result. Trader Joe's Dover Sole

Dover Sole also cooks up super fast, so it is the perfect fish to  cook on a busy night. Here is what we did:

1. Thaw the fish (cool water in the sink)

2. Pre-heat your oven to 425~ nice and HOT.

3. On a foil-lined pan that is lightly oiled, arrange the fish in one level, brush with olive oil and sprinkle with salt and pepper. Trader Joe's Dover Sole 2

4. Roast in the oven for 5-10 minutes until fully cooked.

~ YES! Dover Sole is just that easy to cook!  You will love the sweet flavor of this fish and how fast it cooks in the oven.

Easy Taco Salad

Last post I was telling you about our recent fantastic salsa discovery, Trader Joe’s Roasted Tomato Salsa. We were taking a moment to check out all the yummy salsas that Trader Joe’s carries when we found that one. We were specifically looking for a salsa that would taste great on a Taco Salad.

Taco SaladWe both enjoy taco salads~ they are quick and easy to make and are flexible, without food rules (at least in our minds) so you can add what you have on hand to the basics and have a tasty meal.

That is what we usually do. We start out with the salad basics, add beans or a meat of some kind, and then start adding the optional ingredients to sort of round out the salad.

Some of the optional ingredients we add include: broken taco chips, black olives, green onions, grated cheese, cold leftover veggies or rice~ you can add whatever you like ~ that is the beauty of this kind of salad.

For this salad, we browned a package of Trader Joe’s ground turkey with a spoonful of Trader Joe’s Taco Seasoning and used that as the point to build the rest of the salad.

We had lettuce, cherry tomatoes and an avocation to add some flavors as well. For a change we created Salsa Mayo by adding a scoop of Trader Joe’s Organic Mayonnaise to 2 scoops of our tasty new Roasted Tomato Salsa. We could have added it to some Sour Cream… but I forgot to purchase Sour Cream when we were shopping ….gr…

Halloween Food- Haunted Pea Soup

Here is one more example of tasty Halloween Recipes from our  EBook: Easy Halloween Recipes.  This recipe uses only 4 of Trader Joe’s ingredients that are easy to find and that you could already have in your house.

The fun and creative part of this dish is the creation of the Parmesan Ghost. These are really Parmesan Cheese croutons that we shaped into ghostly creatures and baked until they were golden. Then let them cool on the tin foil. When cool they will peel off and you can use them to garnish a soup or even a salad.

We would suggest you make a few more than you need or practice making the ghosts ahead of time, as they tend to break easily…. and are really tasty!

Ingredients:

Trader Joe’s Organic Split Pea Soup ( consider 1 can for every 2 guests)
Artisan bread for toasting (Ciabatta bread works well)
Butter
Parmesan Cheese, Buy the container of fresh cheese that is crumbly, not in strings if possible)

What To Do:
1. Make parmesan ghosts: Heat oven to 350 degrees and cover a baking pan with foil.
Using the parmesan cheese, create a cheesy ghost- like blob on the foil about ¼ inch thick. Try to make it small enough to fit into your serving bowls, but thick enough so you can peel it up later.
2. Bake parmesan ghost until cheese is lightly brown, about 5-10 minutes. Let cool completely and peel the ghost off the foil. Make 1 ghost per serving of soup.

3.Toast slices of the artisan bread,  and butter if you want.  Heat up the soup.

4.Place hot soup in serving bowls and float a Parmesan Ghost on top. Serve with toasted bread.
